If your matcha is dull olive, it is not ceremonial grade, whatever the tin says.

Real ceremonial matcha is a startling bright green. That color comes from shading the plants for weeks before harvest, which drives up chlorophyll and amino acids and drops the bitterness. It is the single easiest way to tell what you have actually bought.

What makes this ceremonial rather than culinary

Shade-grown. The leaves are covered before harvest, which is what produces the sweetness and the color.

Stone-ground. Slowly, because heat from fast milling damages the flavor. It is also why good matcha costs what it does.

From Japan. Not Japanese-style, Japanese.

One ingredient. 100% matcha. No sugar, no milk powder, no filler. If your matcha needs sweetening in the tin, it was not good matcha.

Why people drink it instead of coffee

Matcha carries caffeine alongside L-theanine, naturally occurring in the leaf. It is the same pairing we put into Clarity Flow deliberately, except here it arrives together because that is how the plant grows.

How to prepare it

Traditional: sift one teaspoon into a bowl, add 2 to 3oz of water at 160 to 175°F, whisk briskly in a zig-zag until frothy.

The temperature is not fussiness. Boiling water scorches matcha and makes it bitter, which is why most people's home matcha tastes worse than a cafe's. Boil, then wait two minutes.

Latte: whisk with a little hot water first to make a paste, then add milk. Skip that step and you get lumps.

Sift it. Matcha clumps in the tin and no amount of whisking undoes a clump.

Questions people actually ask

What is the difference between ceremonial and culinary grade?
Ceremonial is young shade-grown leaves for drinking straight. Culinary is coarser, more bitter, and made to survive being baked into things. Using ceremonial in a brownie is a waste and using culinary in a bowl is unpleasant.

How much caffeine?
Roughly a third to a half of a cup of coffee per serving, alongside L-theanine, which is why it feels different.

Do I need a bamboo whisk?
It genuinely helps. A milk frother is the next best thing. A fork does not work and everyone who has tried already knows.

Why does mine taste bitter?
Water too hot, nearly always. Or it is culinary grade sold as ceremonial.

How long does it keep?
Three months after opening for best flavor, up to a year stored properly. Matcha fades with light and air, so keep it sealed and dark.
